Gorwydd Caerphilly Cheese (App 2Kg)

Trethowan`s Gorwydd Caerphilly is a mature Caerphilly made to a traditional recipe, using raw, unpasteurised milk and natural rennet. These ingredients combined with working the curd by hand, keep the cheese true to the origins of how traditional Caerphilly is made. It is matured on the farm for two months and exhibits a fresh lemony taste with a creamy texture and a firmer but moist inner. The cheese has that familiar crumbly texture yet tastes fresh and creamy with lovely earthy mellow tones.

A traditional clothbound, farmhouse cheddar made by Mary Quicke at her farm at Newton St Cyres in the West Country. Aged for a minimum of 12 months in muslin, it is allowed to breath developing a unique and complex flavour. The old fashioned rind that develops is the hallmark of a well matured, traditional cheddar.

Grandma Singletons Tasty Lancashire (App 2.25Kg)

Named after the founder of Singletons Dairy; Grandma Singleton's is the strongest Traditional Lancashire available and is aged for a minimum of ten months. It is semi-soft in consistency and slightly crumbly with rich yellow colour and a strong, tangy flavour. This is a firm favourite for lovers of strong cheese.

Quickes Smoked Cheddar (App 1.65Kg)

From her Exeter based farm, Mary Quicke takes her muslin bound 12 months mature cheddar and gently smokes small wedges over oak chippings for 3-4 hours. This allows the gentle smoke to fully penetrate the cheese and give an infused smoke flavour combined with the unique west country cheddar tang.

It is matured for 14-24 months and although the taste varies with the seasons it usually has a distinctive fruity, nutty taste with a clean sweet finish. Made in the Lincolnshire Wolds it is made with unpasteurised cows milk.
