This delicious semi-hard cheese from Cornwall is deliciously creamy under the rind and slightly crumbly in the core. It has a young, fresh, slightly tangy taste. After pressing and brining, the cheese is wrapped in nettle leaves picked wild from neighbouring properties.

Mrs Kirkhams Lancashire Cheese (Appx 2.5Kg)

Cloth bound and sealed with butter this Preston made Lancashire is still made to a 30 years old family recipe. Using unpasteurised milk from cows that graze on salt rich pastureland near the Irish Sea this is one of Rick Steins food heroes. It is one of the most famous of all Lancashires, has a rich and buttery flavour but still retains the traditional Lancashire tang.

Shorrocks Lancashire Bomb

Made by Andrew Shorrock at his Preston farm, this is a seriously powerful, tasty and mature Lancashire. Its is made using pasteurised cows milk and vegetarian rennet and is matured for two years. During this time it becomes creamy and develops small calcium crystals which gives a little crunch. It is encased in black wax, and presented as a old fashioned bomb which makes it stand out from its competitors.

Made by Long Clawson Dairy, in the Vale of Belvoir, this fantastic aged Red Leicester is perfect for any cheeseboard. With the usual rich orange colour it has a lemony and slightly sweet flavour reminiscent of caramel. The only pasteurised Red Leicester made in Leicestershire.

Appleby Coloured Cheshire Appx 2Kg

The only traditional, clothbound, farmhouse Cheshire still made. The 3rd generation of the Appleby family still make this amazing cheese on their farm near Whitchurch. The cheese has a golden orange colour due to the added annato, a crumbly texture and a light, tangy flavour.

Similar to a West Country Cheddar but Lincolnshire Poacher still has its own unique flavour and texture. It is matured for 14-24 months and although the taste varies with the seasons it usually has a distinctive fruity, nutty taste with a clean sweet finish. Made in the Lincolnshire Wolds it is made with unpasteurised cows milk.

Trethowan`s Gorwydd Caerphilly is a mature Caerphilly made to a traditional recipe, using raw, unpasteurised milk and natural rennet. These ingredients combined with working the curd by hand, keep the cheese true to the origins of how traditional Caerphilly is made. It is matured on the farm for two months and exhibits a fresh lemony taste with a creamy texture and a firmer but moist inner. The cheese has that familiar crumbly texture yet tastes fresh and creamy with lovely earthy mellow tones.
