Simply grill with shaved Manchego Cheese, marinated anchovies and a chilli dressing over the top makes a light but warming starter.

- 4 large sprigs of Purple Sprouting Broccoli
 - 100ml Yorkshire Extra Virgin Rapeseed Oil
 - 20 Fillets of Marinated Anchovies
 - 2 Red Chilli’s finely diced with seeds removed
 - 20g shaved Manchego Cheese
 
Method
                                    Mix the finely diced chili with the rapeseed oil set to one side                                
                                                                
                                
                                    Heat a griddle pan, when hot sear the broccoli on one side so it is charred                                
                                                                
                                
                                    Remove from the griddle, place on to a plate and cover in cling film. The residual heat will gently steam the broccoli finishing it’s cooking                                
                                                                
                                
                                    After 2-3 minutes uncover the broccoli, season and place on to the plate.                                
                                                                
                                
                                    Scatter the shaved cheese & anchovies over the broccoli and drizzle the chilli oil over and around.                                
                                                                
                                
                                    You could add a soft poached quail egg for an extra layer of richness.
