Beetroot Ball Sub, Cucumber, Mint And Pear Slaw

Ingredients

  • 1 Stick of V Pud (vegan black pudding)
  • 100g Grated fresh beetroot
  • 2 Pears grated
  • Half cucumber grated
  • 10 Leaves mint chiffonade
  • 3 tbsp Vegan mayonnaise
  • Beetroot glaze
  • Four sub rolls

Method

Mash together the V pud, grated beetroot and one of the grated pears. Form into balls.
Mix together the vegan mayo, mint and other grated pear, to make the slaw.
In a frying pan, using veg oil, fry the balls gently until brown on all sides. Transfer to a large bowl and gently cover in the beetroot glaze/
Serve in a sub roll with the slaw.
