Mixed Grain, Blood Orange, Fennel, Samphire, Olives & Herb Salad

Ingredients

  • 1 Pack mixed cooked grains
  • E.V Olive oil
  • 6 Blood oranges segmented
  • 1 Bunch of samphire washed
  • 200g Chopped Italian pitted olives
  • 10g Picked parsley
  • 5g Picked chervil
  • 5g Picked mint
  • 5g Picked dill
  • 1 Bulb fennel finely sliced & Kept in ice water
  • Seasoning

Method

Heat a large pan with the Extra Virgin Olive Oil & sauté the samphire gently. Add the grains to warm through and remove from the heat, mix in the rest of the ingredients correct seasoning and serve.
