Pulled Smokey Mushrooms Served with Mac Cheese

Ingredients

  • 400g King oyster mushrooms
  • 250g Oyster mushrooms
  • 80ml Olive oil
  • Finely sliced onions
  • 15g Smoked garlic
  • 18g Smoked paprika
  • 5g Ground cumin
  • 1g Oregano
  • 1g black pepper
  • 5g sea salt
  • 500g tomato pulp
  • 3g Thyme

Method

Prepare the mushrooms by pulling apart with a fork and then place into a mixing bowl.
Add the oil, sliced onion, chopped smoked garlic, paprika, cumin, oregano, black pepper, and salt.
Heat a deep frying pan and add the mushrooms , cook on a low heat until tender then add the tomato pulp and fresh thyme and continue to cook out until reduced.
Serve with Mac cheese or as a burger topper.
