Slow cooked oats & grain porridge topped with seasonal fruit compote, toasted omega seeds.

Ingredients

  • Quaker Gluten Free Original Porridge Oats - 80g
  • Frozen Vegan Cooked Quinoa - 80g
  • Oatly Oat Drink Barista Edition - 750ml
  • Frozen Fruits Of The Forest - 500g
  • Everyday Favourites Cornflour - 15g
  • Whole Cashew Nuts - 150g
  • Everyday Favourites Pine Kernels - 100g
  • Coconut Oil - 60g
  • Pomegranate Seeds 500g - 40g
  • Mixed Toasted Seeds - 40g

Method

Mix the oats and quinoa together and place in a pan with the oat milk, on a low heat cook out until both are cooked - approximately 30 minutes.
Put the fruits in a clean pan and slowly cook down, combine the cornflour with some water and thicken the fruit mix, allow to cool before serving.
Toast the cashew and pine kernels in a pan and then add to a blender, combine with the coconut oil and blend until a smooth nut butter is formed - serve alongside the porridge.
Once the porridge is cooked top with the fruits, pomegranate seeds, toasted seeds of choice and the nut butter.
